“We started as Ireland’s first proper churrería, and we remain unique,” says co-founder Nigely. “It’s about creating an experience, not just serving food.”

Sweet Churro’s story embodies resilience. Excluded from this year’s Dublin Castle Christmas market due to management changes, the business turned a setback into a showcase of adaptability. “Events like the Christmas at the Castle ensure heavy footfall,” Nigely explains. “They keep us in contact with virgin customers during the high-demand season.”

While many might see exclusion as a loss, Sweet Churro saw it as an opportunity to innovate. By increasing employee hours and streamlining operations, they ensured every guest was cared for quickly and efficiently. The perfectly crispy churros, inspired by Venezuelan cuisine, continue to warm the hearts of locals and tourists alike.
